Remember on my last post when I said I was sick with a cold? It was actually covid š Which technically means I still havenāt had a cold in close to a decade šŖš¼š¤§
ā¦but anyways that kicked my butt but I am now testing negative and am officially on the mend. Because my body is busy clearing mucous and regaining strength, I wanted to make a easy-to-digest & micro-nutrient rich soup. This is a great soup if your digestibility is compromised, if you are sick (or recovering!), hungover or as an everyday gut-friendly soup āŗļø
1 tablespoon of avocado oil
Ā½ red onion
2 carrots
2 celery stalks
4 cloves of garlic
3.5 cups of bone broth
1/2- 1 tsp of rosemary, garlic powder, basil, pink salt, oregano, vegeta, ginger
2 bay leaves
Ā½ cup cauliflower
2 tablespoons nutritional yeast
1 handful of spinach
1 cup red lentils
š« in pot, sautĆ©ed the onion, carrots, celery and garlic for a few minutes
š« add the spices (I estimated the amounts, use what your heart desires)- make sure to stir plenty to make sure they donāt burn!
š«add the bone broth, cauliflower, spinach, nutritional yeast and lentils
š«bring to a boil and lower heat to a simmer for 20 minutes for the lentils to cook
š«once cooked, blend in a high powered blender or use an immersion blender
